Ingredients

  • 1/2 cup unsalted butter, softened
  • 4 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1 cup fresh strawberries, reduced to 1/4 cup

Instructions

  1. Preheat oven to 350F (175C) and line a baking sheet with parchment paper.
  2. Simmer chopped strawberries until reduced to a thick jam; let cool completely.
  3. Cream butter and cream cheese together until smooth and fluffy.
  4. Beat in sugar until light, then mix in the egg and vanilla.
  5. Fold in sifted flour and baking soda until just combined.
  6. Gently swirl in the cooled strawberry reduction.
  7. Scoop 1-inch balls onto the sheet and bake for 10-12 minutes.
  8. Cool on the pan for 5 minutes before moving to a wire rack.
