A fusion dessert that combines the creamy tang of New York cheesecake with the sweetness of a strawberry reduction in a soft, chewy cookie.

- 1/2 cup unsalted butter, softened
- 4 oz cream cheese, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1/2 tsp baking soda
- 1 cup fresh strawberries, reduced to 1/4 cup
Instructions
- Preheat oven to 350F (175C) and line a baking sheet with parchment paper.
- Simmer chopped strawberries until reduced to a thick jam; let cool completely.
- Cream butter and cream cheese together until smooth and fluffy.
- Beat in sugar until light, then mix in the egg and vanilla.
- Fold in sifted flour and baking soda until just combined.
- Gently swirl in the cooled strawberry reduction.
- Scoop 1-inch balls onto the sheet and bake for 10-12 minutes.
- Cool on the pan for 5 minutes before moving to a wire rack.
