Instructions
- Preheat oven to 375°F and line a muffin tin.
- Whisk flour, baking powder, sugar, and salt together.
- Cream butter and sugar, then beat in egg and vanilla.
- Fold dry ingredients into wet ingredients until just combined.
- Gently fold in chopped strawberries.
- Fill muffin cups 1/3 full with batter.
- Add a dollop of cream cheese mixture to the center.
- Top with remaining batter.
