  • 2 medium sweet potatoes, peeled and diced
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 cups baby spinach
  • 1 red bell pepper, thinly sliced
  • 1 ripe avocado, sliced
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a bowl, toss sweet potato cubes with 1 tbsp olive oil, cumin, paprika, salt, and pepper until evenly coated. Spread on the baking sheet.
  3. Roast sweet potatoes for 25-30 minutes until tender and caramelized.
  4. Toss chickpeas with remaining olive oil, cumin, paprika, salt, and pepper. Spread on another baking sheet and roast for an additional 15-20 minutes until crispy.
  5. In serving bowls, layer fresh spinach as the base. Top with roasted sweet potatoes, crispy chickpeas, sliced bell peppers, and avocado.
  6. Serve with your choice of dressing.
