Instructions
- Preheat your oven to 350°F (175°C) and line two large baking sheets with parchment paper.
- In a large bowl or stand mixer, cream together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy.
- Stir in the peanut butter, egg, and vanilla extract until smooth and well combined.
- In a separate medium bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry flour mixture to the wet ingredients, mixing on low speed until just combined.
- Scoop about 1 tablespoon of dough at a time and roll into 1-inch balls.
- Place balls on the prepared baking sheets, spaced 2 inches apart.
- Press a fork into the top of each ball in a crisscross pattern to flatten them slightly.
- Bake for 10 to 12 minutes, or until the edges are lightly golden brown.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
