  • 1 cup creamy peanut butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line two large baking sheets with parchment paper.
  2. In a large bowl or stand mixer, cream together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy.
  3. Stir in the peanut butter, egg, and vanilla extract until smooth and well combined.
  4. In a separate medium bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry flour mixture to the wet ingredients, mixing on low speed until just combined.
  6. Scoop about 1 tablespoon of dough at a time and roll into 1-inch balls.
  7. Place balls on the prepared baking sheets, spaced 2 inches apart.
  8. Press a fork into the top of each ball in a crisscross pattern to flatten them slightly.
  9. Bake for 10 to 12 minutes, or until the edges are lightly golden brown.
  10. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
