Ingredients

  • 1/4 cup pan drippings (fat and juices separated)
  • 2 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 4 cups turkey stock
  • 1/2 teaspoon black pepper
  • Salt to taste

Instructions

  1. Strain pan drippings through a sieve into a container and let the fat rise to the top.
  2. Place the fat and butter in the roasting pan or a saucepan over medium heat until melted.
  3. Whisk in the flour and cook for 2-3 minutes until the mixture is golden brown and fragrant.
  4. Slowly pour in the turkey stock one cup at a time, whisking constantly to prevent lumps.
  5. Stir in the remaining concentrated pan juices (jus).
  6. Simmer on low heat for 5-8 minutes until the gravy reaches a smooth, coating consistency.
  7. Season with black pepper and salt after tasting.
