- 1/4 cup pan drippings (fat and juices separated)
- 2 tablespoons unsalted butter
- 1/4 cup all-purpose flour
- 4 cups turkey stock
- 1/2 teaspoon black pepper
- Salt to taste
Instructions
- Strain pan drippings through a sieve into a container and let the fat rise to the top.
- Place the fat and butter in the roasting pan or a saucepan over medium heat until melted.
- Whisk in the flour and cook for 2-3 minutes until the mixture is golden brown and fragrant.
- Slowly pour in the turkey stock one cup at a time, whisking constantly to prevent lumps.
- Stir in the remaining concentrated pan juices (jus).
- Simmer on low heat for 5-8 minutes until the gravy reaches a smooth, coating consistency.
- Season with black pepper and salt after tasting.
