- 3/4 cup brown sugar
- 1/2 cup pumpkin purée
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1 tsp ground cinnamon
- 1/2 tsp baking soda
- 1 tsp cream of tartar
- 1/4 cup sugar + 1 tbsp cinnamon (for rolling)
- 4 oz cream cheese, softened
- 1 cup powdered sugar
- 1 tbsp milk
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together softened butter and brown sugar until light and fluffy.
- Mix in pumpkin purée and vanilla extract until combined.
- Whisk flour, cinnamon, baking soda, and cream of tartar in a separate bowl.
- Gradually stir the dry ingredients into the wet mixture until just combined.
- Roll dough into 1-inch balls and coat them thoroughly in the cinnamon-sugar mixture.
- Place on baking sheet and bake for 10-12 minutes.
- Cool cookies completely on a wire rack.
- Beat cream cheese, powdered sugar, and milk together until smooth.
- Drizzle or pipe the icing over the cooled cookies.
