- 2 lbs beef chuck, cut into 1-inch cubes
- 1 can (14.9 oz) Guinness beer (stout variety)
- 4 medium carrots, chopped
- 3 medium potatoes (Yukon Gold or Russet), diced
- 2 medium yellow onions, chopped
- 4 cloves garlic, minced
- 2 bay leaves
- 1 tsp dried thyme (or 2 tsp fresh thyme)
- 4 cups low-sodium beef broth
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Brown the beef cubes in batches for about 5 minutes per batch until all sides are seared. Remove and set aside.
- In the same pot, add onions and garlic; sauté until translucent (~3 minutes). Then stir in carrots and potatoes; cook for another 5 minutes.
- Pour in Guinness beer and scrape any browned bits from the bottom of the pot. Add beef broth along with bay leaves and thyme.
- Return browned beef to the pot; bring to a simmer. Reduce heat to low and cover, cooking for about 1.5 to 2 hours until beef is fork-tender.
- Season with salt and pepper before serving.
