  • 2 lbs beef chuck, cut into 1-inch cubes
  • 1 can (14.9 oz) Guinness beer (stout variety)
  • 4 medium carrots, chopped
  • 3 medium potatoes (Yukon Gold or Russet), diced
  • 2 medium yellow onions, chopped
  • 4 cloves garlic, minced
  • 2 bay leaves
  • 1 tsp dried thyme (or 2 tsp fresh thyme)
  • 4 cups low-sodium beef broth
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Brown the beef cubes in batches for about 5 minutes per batch until all sides are seared. Remove and set aside.
  2. In the same pot, add onions and garlic; sauté until translucent (~3 minutes). Then stir in carrots and potatoes; cook for another 5 minutes.
  3. Pour in Guinness beer and scrape any browned bits from the bottom of the pot. Add beef broth along with bay leaves and thyme.
  4. Return browned beef to the pot; bring to a simmer. Reduce heat to low and cover, cooking for about 1.5 to 2 hours until beef is fork-tender.
  5. Season with salt and pepper before serving.
