  • 2 cloves fresh garlic, minced
  • 2 tbsp extra virgin olive oil
  • 1 cup long grain rice
  • 2 cups low-sodium chicken broth
  • 1 cup queso blanco cheese
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions
