  • 1 medium onion (diced)
  • 2 cloves garlic (minced)
  • 1 cup cheddar cheese (grated)
  • 1 package puff pastry sheets (thawed)
  • 1 egg (for egg wash)
  • 1 tbsp water

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a skillet over medium heat, sauté the onion in oil until translucent. Add minced garlic and cook for an additional minute.
  3. Add ground beef to the skillet, seasoning with salt and pepper; cook until browned.
  4. Remove from heat and mix in grated cheddar cheese until melted; let cool slightly.
  5. Roll out puff pastry sheets on a floured surface, cutting into circles about 4 inches in diameter.
  6. Place a tablespoon of the beef-cheese mixture onto each circle, fold over to create half-moons, and seal edges with a fork.
  7. Brush each empanada with the egg wash made from whisking egg and water together.
  8. Bake for 20-25 minutes until golden brown.
